Peach and Oat Hotcakes and My New Awesome Ozeri Pan!

I can't make these fast enough for my kids, or me!  Simply sweet and fresh taste, yum!

I used My Whole Food Life's Melissa's recipe for Apple Cinnamon Waffles as a starter to make this pancake recipe!  Thank you Melissa!


Peach and Oat Pancakes

1 c whole wheat flour
1 c oats, ground
1 t cinnamon
1 t baking powder
1/2 t nutmeg
1 c nectarine, pureed (or apples, peaches, mango, blueberries, pumpkin...any fruit perhaps!)
1 c milk
1 T flaxseed, ground with 3 T warm water (or an egg)
1 t vanilla

Mix the dry ingredients (top five).  Separately mix the wet ingredients (last four).  Make a well in the dry to pour in the wet, and mix.  Ok, so you can make pancakes now with a griddle pan with some oil on it. Or, if you have an Ozeri non-stick and non-Teflon pan, which my hubby recently gave me as a gift, you can make the pancakes without any oil (so cool!).

The Ozeri pan has a ceramic coating so food won't stick to it with no use of oil, and no heavy metals or chemicals.  It is a really awesome pan and you barely have to clean it!

Autumn Harvest Salad

SUPER EASY and NUTRITIOUS!



Autumn Harvest Salad
1 can tuna or chicken or wild canned salmon
1 c plain yogurt CLICK here for Benefits!
1 Tbsp extra virgin olive oil (optional)
1/2 c fresh cranberries (or you can try dried cranberries)
1/2 c walnuts CLICK here for 3 Wonderful Reasons to Be Wild about Walnuts!
1 apple, chopped
salt, pepper, cinnamon

Great on its own, whole wheat toast, or a roll-up of flat bread (Flatout) or a tortilla!

Cranberry Pesto Pasta Salad

After devouring the leftovers that my mom shared with me,
from a delightful lunch she'd just been to, I created THIS recipe!



Mine is certainly a much healthier pasta salad, and still very tasty!

Cranberry Pesto Pasta Salad


2 c celery, chopped (most of a bunch of celery), include the leaves in the middle!
5 mozzarella cheese sticks, chopped into little coins
1 red apple, chopped
1 c walnuts, broken up pieces or whole
1/2 c freeze dried cranberries, unsweetened (Whole Foods carries), OR 1/4 c Craisins (I prefer less because of the sugar), OR while I haven't, you could try fresh! 
1 jar pesto (or this EASY HOMEMADE PESTO!)
1 box pasta, whole wheat, prepared



While pasta is cooking, chop other ingredients.
Drain pasta and mix in all ingredients.
Chill for a while, and enjoy!

This salad is great for hot days, picnics, and parties!
It is also surprisingly yummy when quickly heated in the microwave :)


BONUS TIP #1: avoid rinsing cooked pasta to retain vitamins which are otherwise washed away!

BONUS TIP #2: re-heat only as much food as you think you'll need, since foods should only be reheated ONE TIME (FOOD SAFETY!).  Single serving dishes are also great because they heat through quickly.

Kohlrabi Cabbage Salad -- Awesome!

This is a simple,
refreshing,
cancer-preventing,
crunchy,
tart,
sweet,
and salty salad that you will love!



Kohlrabi Cabbage Salad

1/3 of a head of cabbage
1 kohlrabi
1 large apple
1 lemon OR lemon juice
Extra virgin olive oil
Salt
Pepper

Thinly slice everything up, mix, and enjoy!

*Before chopping kohlrabi, discard stems and cut off outer layer -- I hadn't even heard of this veggie before I joined Geauga Family Farms CSA!)

*If including a whole lemon, very yum!, cut off outermost yellow skin, keeping plenty of the white portion; it has a mild, taste and adds fiber!

*Play with the quantities of juice, oil, salt, and pepper to get the taste you love!  It's always a good idea to start with less than you think you'll need -- harder to take away than to add!

*Kohlrabi and cabbage are cruciferous veggies, in the same group as broccoli and cauliflower, which all have amazing properties which allow humans to prevent cancer, and even potentially reverse it!  Click on any of the links for more information and other recipes for cruciferous veggies!

I always love when I don't have to cook something at the stove or in the oven, and ESPECIALLY in this sweltering summer of 2012!  Hope you enjoy too!  How are you staying COOL?!

3-Ingredient Fruit Salsa!

FRUIT -- the world's natural sweetness!

See why it's so great -- starting with its FIBERY goodness!!

This weekend my friend, Jenny, introduced me to this delicious FRUIT SALSA!

She tried it first with sweetener, but decided (even being the sugar-lover that she is) that it's great even without the added sweetener!




Tupperware Fruit Salsa

1 Apple
3 Kiwis
8 Strawberries

Simply chop everything up and enjoy!  I used my mini food chopper, or you could use your
Tupperware Chopper if you have one!

Great on yogurt, cottage cheese, toast, your favorite chips or crackers, or these:

Food Should Taste Good Multigrain Tortilla Chips

These most simply have 3 grams of fiber per serving, making them a better choice than usual tortilla chips.    They still should be considered a treat, but when you're having this special treat, you'll be getting some fiber and other nutrients too!  These are made with a variety of nutritious ingredients, including flaxseed (unfortunately the seeds are whole making their omega-3 fats unabsorbable), quinoa and brown rice (healthy gluten-free grain alternatives), oats, sunflower and sesame seeds!  Check out the Nutrition Facts and Ingredients.
