There are SO very many delicious options!

Bran, buckwheat, whole wheat orzo, Barilla Plus pasta, whole wheat couscous,
quinoa, wild rice, rye flakes, farro  grain, wheat germ, Mama Mary's whole wheat pizza crust.

If you take a chance at stepping away from Wonder Bread and regular, white pasta and rice,
there is SO much available!!

Copy-Cat California Pizza Kitchen Barbecue Chicken Pizza

Have you ever eaten anything from California Pizza Kitchen?  
If YES, chances are, you've tried the barbecue chicken pizza!  
If NO, this is what you should try first!

My version is a cheese-free version.  Wonder why?  Click HERE!
Chicken Guacamole Pizza is another DELICIOUS cheese-free pizza!
Both pizzas are actually delicious with or WITHOUT the chicken!

Barbecue Chicken Pizza
1 large onion
Extra virgin olive or canola oil
1 chicken breast
Barbecue sauce
1 whole wheat pizza crust (Boboli or Mama Mary's are both great!)

Boboli whole wheat is pretty similar to Boboli THIN crust -- just has more fiber!
A lot more, 4 g rather than less than a gram!
If you compare whole wheat to original, there are 60 fewer calories per slice (120 vs 180)!

Mama Mary's pizza crusts have similar nutrition comparisons.

Ok, back to the recipe!

Chop up onion and saute in oil.
Cook and chop chicken breast.
Spread crust with thin layer of sauce.
Cover with onions and chicken, and mash evenly.
Top with a bit more sauce in a pretty swirl!
Bake pizza as directed on label.
Enjoy!


Great with a side of asparagus!
Veggies retain most nutrients when prepared with as little water and for as little time as possible!
Most veggies cook well in the microwave with just a tbsp of water added.

There is nothing healthy about barbecue sauce -- it's basically SUGAR.
Still it's one exception in our house for a unique flavor!

BONUS TIP: Rather than cutting with a knife, 
break off the bottoms of asparagus with your hands as they naturally snap, 
for perfectly tender spears!

A quick sprinkle of lemon juice is also tasty!


COMMENTS: Do you notice the odor of your urine after eating asparagus?  There are different theories about this -- some scientists say it's a difference in the urine that varies between people.  Others say that it is a difference in people's sense of smell, ability to detect that particular odor.

Pizza and Post Pleasure!

Since I am posting on my BIRTHDAY, a) it's gotta be a FUN one! and b) you know how much I must LOVE writing this blog!  Here's a sneak peak at Mouth-Watering Chicken Guacamole Pizza:



But FIRST, I'll share.  I feel so very blessed and lucky to have a passion -- helping people learn how to be healthy, inside and out!

Since returning to Cleveland 4 years ago, I have thoroughly enjoyed my FRESH-YOU Nutrition, Fitness, and Wellness business!  I've been thrilled to teach and work with many lovely people through one-on-one consultations, small-group classes, and presentations -- everyone interested in increasing their health and well being!

Recently, I have SO been enjoying regularly posting on www.fresh-you.com!  This outlet gives me the opportunity to spread the WELLNESS-WORD whenever I have a minute to squeeze it in.  With 3 amazing children under 6, those times can be a little hard to come by.  Sort of strange to schedule a consultation at 9pm on a Friday night, right!?  But I can more feasibly pop out a post!

SO, simply, THANK YOU!  Thank you for reading, experimenting, tasting, and having an OPEN MIND to all that I have to offer!

PIZZA, PIZZA, PIZZA!

Chicken Guacamole Pizza is our very favorite!  It's even on my business card!  This is an easy, satisfying, and delicious source of healthy fat, high-quality protein, fiber, B-vitamins, vitamin C, iron, potassium, magnesium, lycopene, and carotenoids!

It is equally delicious with or without the chicken, depending on your preference. It's a great idea to add a few vegetarian meals each week to anyone's diet. Chicken adds high quality protein. You choose!

Mouth-Watering Chicken Guacamole Pizza (original version)

3 tomatoes, medium, fresh, sliced
Extra virgin olive oil
1 lb chicken, boneless, skinless, cooked, chopped
1 package Wholly Guacamole -- awesome product, great ingredients list, so convenient!
(or you can make some homemade Guacamole with THIS recipe)
1 whole wheat pizza crust (Boboli or Mama Mary's are both great!) 

Drizzle a single layer of tomato slices with oil and bake at 350° for 30 min.  Spread guacamole over crust.  Cover guacamole with tomato slices.  Add chicken.  Mash everything down with a spatula.  Follow crust baking directions.  Slice and enjoy!

Guacamole Pizza (easiest/fastest version)

1 can diced tomatoes, drained
1 package guacamole
(Wholly Guacamole -- awesome product, great ingredients list, so convenient!)
1 packaged diced chicken (optional)
1 whole wheat pizza crust (Boboli or Mama Mary's are both great!)

Spread guacamole over crust and top with tomatoes.  Follow pizza crust directions for baking.  Enjoy!



I was going to include two more great pizzas -- Barbecue Chicken and Chicken Artichoke, but those will have to be for another day! Isn't the video cool?!
