Freshened Up Hard Boiled Eggs!

A new way to cook them and a new way to make egg salad!


This isn't really a miracle technique, nor is it new (long ago eggs were cooked hidden within hot coals).  It's more of an interesting one!  You can cook hard "boiled" eggs in the oven!

HERE IS HOW

  1. Let your eggs warm for a few minutes at room temperature.
  2. Put eggs into a mini-muffin baking pan.
  3. Put pan in the oven while it heats to 325 degrees.  
  4. Bake for 30 minutes.  
  5. Rinse eggs with cold water to cool off shells.  
  6. Roll and peel eggs, and voila!  
  7. You've got perfectly delicious hard-cooked eggs!

For a great egg salad, combine lots of chopped red bell pepper (or celery or any other crunchy veggie!), plenty of hummus, and some pepper with your eggs!



A few BENEFITS of hard-baking eggs: fewer cracked eggs and ease of LARGE batches; big fans say they get perfect eggs every time, instead of green/gray yokes.  Mine have turned out well, but I've just done it a few times so far.  A few cracks of a few dozen the first time, and none this time!

SOME UPS AND DOWNS OF EGGS

Eggs are an animal product, so caution with how much you eat (see 5 BIG REASONS to MAKE YOUR MEAT PORTIONS SMALL).

However, don't worry particularly about the cholesterol in eggs (~200 mg per egg yolk) since dietary cholesterol (the kind you eat) doesn't usually even come close to the quantity that each of our own bodies make daily (~800 mg per day!).  ALL animal products contain dietary cholesterol.
