Freshened Up Hard Boiled Eggs!

A new way to cook them and a new way to make egg salad!

This isn't really a miracle technique, nor is it new (long ago eggs were cooked hidden within hot coals).  It's more of an interesting one!  You can cook hard "boiled" eggs in the oven!

HERE IS HOW

  1. Let your eggs warm for a few minutes at room temperature.
  2. Put eggs into a mini-muffin baking pan.
  3. Put pan in the oven while it heats to 325 degrees.
  4. Bake for 30 minutes.
  5. Rinse eggs with cold water to cool off shells.
  6. Roll and peel eggs, and voila!
  7. You've got perfectly delicious hard-cooked eggs!

MIDDLE EASTERN EGG SALAD ~ can you think of a better name?

For a great egg salad, combine lots of chopped red bell pepper (or celery or any other crunchy veggie!), plenty of hummus, and some pepper with your eggs!

A few BENEFITS of hard-baking eggs: fewer cracked eggs and ease of LARGE batches; big fans say they get perfect eggs every time, instead of green/gray yokes.  Mine have turned out well, but I've just done it a few times so far.  A few cracks of a few dozen the first time, and none this time!

ORGANIC eggs are always your best choice, well worth the expense, and even organic eggs are still a pretty cheap food, especially from Costco!  See Colleen's Costco Cart for other great Costco picks!

SOME UPS AND DOWNS OF EGGS

Eggs are an animal product, so caution with how much you eat (see 5 BIG REASONS to MAKE YOUR MEAT PORTIONS SMALL).

However, don't worry particularly about the cholesterol in eggs (~200 mg per egg yolk) since dietary cholesterol (the kind you eat) doesn't usually even come close to the quantity that each of our own bodies make daily (~800 mg per day!).  ALL animal products contain dietary cholesterol.

On the bright side, check out all the NUTRIENTS an egg provides!  Especially the egg YOLK!

COMMENTS?  Do you eat eggs?  Do you think you're being healthy or "nutritionally-naughty" when you do?

Chocolate for your Heart?

Chocolate is beneficial to your HEART HEALTH in so many ways!
  • Chocolate contains FLAVONOIDS, also in green tea, red wine, cranberries, apples, peanuts, onions, and many others
  • Chocolate reduces your risk of heart attack and stroke by:
  • LOWERING your blood pressure
  • Improving blood flow to your heart and BRAIN
  • LOWERING cholesterol
  • Flavonoids are rich in ANTIOXIDANTS -- antioxidants munch up free radicals -- free radicals are destructive chemicals partly to blame for heart disease and other health problems.
  • Chocolate's antioxidant activity helps heart health by decreasing cell damage in the tissues of the heart and arteries, and by preventing LDL oxidation (Oxidation of LDL (lousy) cholesterol often causes a heart attack to occur.)
  • Chocolate makes platelets less sticky, thins blood, and reduces likelihood of clotting or clumping (the way ASPIRIN helps your heart!), preventing artery plaque formation

So you see chocolate can really help your heart health! Here are a few tips to be sure you get the benefits described above!:  CHOCOLATE EATING TIPS
